Drunken Pork Chops

This recipe is from Sweet Potatoes, Well, Shut My Mouth written by Stephanie Tyson, Chef and co-owner with Vivian Simpson of Sweet Potatoes in Winston-Salem. The Country Ham Bordelaise is heavenly and will be a recipe you will use for many dishes once you taste the rich flavor. They get their ham from Ronnie’s Country Store in Winston- Salem, an old-fashioned family grocery store with hams hanging from wooden beams and a barrel full of homemade molasses.

Ingredients

  • 6 boneless thick sliced pork chops
  • 1 cup apple brandy or hard cider
  • 2 teaspoons chopped garlic
  • ½ teaspoons herbs de Provence
  • ½ cup vegetable oil
  • 2 teaspoons kosher salt

Instructions

Combine all the ingredients in a non-reactive dish and allow marinating 4 hours or overnight. Remove from marinade and season with pepper. In a large skillet or grill pan cook the pork chops about 6 minutes on each side. Serve with country ham bordelaise.
