Peas “a la Francaise”

Your kids will never say "no" to peas again after you introduce them to this dish. Quick and easy and would be an excellent alongside a chicken dish.

Ingredients

  • 3 strips bacon, cut into pieces and blanched in water for 1 minute
  • 1 tablespoon canola oil
  • 5 tablespoons butter
  • 1/2 cup diced onion
  • 2 cups fresh peas
  • 1 cup shredded romaine
  • Salt and pepper to taste

Instructions

In a large skillet over medium heat, add bacon, canola oil, 1 tablespoon of butter, onions, and 1 tablespoon of water. Cook until the onion is tender, then add peas, cup of water, and remaining butter.

Season with salt and pepper and simmer slowly for 5 minutes.

Add the lettuce and cook until just wilted. Serve immediately.

Serves 3-4.
