Grilled Country Ham Biscuits

For game day tailgating, “get there early and keep it simple” is my motto. Since some games start at noon, why not kick off the day with a grilled ham biscuit?

Ingredients

  • 2 cups soft wheat all-purpose flour
  • 2 teaspoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon fine sea salt
  • 3/4 grated Swiss cheese
  • 2 tablespoons minced fresh chives
  • 1 1/2 cups heavy whipping cream
  • 4 pieces center-cut country ham
  • Peanut or canola oil

Instructions

Heat oven to 450°.

Whisk the flour, sugar, baking powder and sea salt to combine. Stir in the cheese and chives. Add the cream and stir until combined. (The dough will be slightly dry.)

Turn the dough out onto a floured surface and press to flatten and fold about three times or until the dough is smooth.

Roll to 1/2 inch thick. Cut with a floured biscuit cutter and place on a baking sheet or cake pan. Bake until golden brown, 10 to 12 minutes.

Transfer the biscuits to a cooling rack.

Start a charcoal fire or preheat your gas grill. When hot, place the ham slices directly on the grill. Cook for about three minutes or until grill marks appear, flip and cook three minutes more. Remove and reserve.

Cut the biscuits in half and brush the tops with melted butter. Add a piece of ham and place the ham biscuit top side down on the grill. Cook for about two minutes, remove, and enjoy.
